Black Bean Tofu Tacos


Taco Friday... Ole!

Every Friday is taco Friday at the Sheen residence; if you come over for dinner on a Friday, you will be having tacos. This recipe is a hybrid from my good old standby. What can I say, I got frisky this Friday; must have been the Ravenswood Zinfandel :)

Need:
1 pkg extra firm tofu (I use the kind in plastic... Soy Deli is my favorite brand
1 1/2 tsp chili powder
1 1/2 tsp cumin
1 1/2 tsp coriander
1/2 tsp salt
1 Tablespoon olive oil (for saute)
4 cloves garlic, chopped or Pampered Chef 'smashed', as I prefer
4 or 5 green onions, chopped
2 cans black beans, drained (you can make your own, but that's another post)
Corn tortillas (I prefer homemade {another post again} but TJs makes a great 'homemade' tortilla)
3 cups rocket or fresh spinach
2 cups chopped tomatoes or fresh salsa (still working on posting the salsa recipe that honey refuses to share!!)
1 cup shredded 'cheese' (use regular cheese if you like but Vegan Gourmet cheese is fantastic in these!)

Do:
Open tofu and crumble into a bowl. Add chili powder, cumin, coriander and salt and mix together.

Heat oil in skillet and add green onions; cook about 2 minutes then add tofu mix, stirring then allowing to cook. Let cook about 10 minutes, stirring occassionally.

Add black beans and stir well until beans are heated.



Serve:
We do family style; i.e. put everything in bowls and let everyone spoon into tortillas what they like... see pictures! You can also spoon mix and add toppings before serving.
